Chef Tracy holds degrees and certifications from The French Culinary Institute, The International Pastry Arts Center, Fairleigh Dickinson University, Living light Raw Foods, Natural Gourmet Institute, International Association of Culinary Professionals, and others. She is considered an expert in nutritional cuisine with an emphasis on Southwestern and Mediterranean flavors.
Tracy opened the first "Tex Mex" restaurant in NYC in addition to working at Arizona 206, The River Cafe and Gotham Bar & Grill before heading west to become the Executive Chef at the prestigious Golden Door Spa and consultant to Rancho La Puerto in Tecate, Mexico.
Tracy's cuisine has been featured in over 30 publications including the cover of Bon Appetit Magazine's " Guide to the Best Restaurants in America", a six page feature in Art Culinaire Magazine, Gourmet Magazine, the New York Times, Elle, and the Travel & Leisure. She has appeared numerous times on Good Morning America and the TV Food Network, twice cooked at the James Beard House as a Rising Chef, trained chefs in Malaysia, debated Julia Child on the merits of healthy cuisine, owned two very successful restaurants in Santa Fe - Whistling Moon and Prana, opened the first juice bar for Equinox Gyms in NYC, helped write the curriculum for the New York Restaurant School and was a personal chef to weight loss Guru Jenny Craig.
Tracy is also a noted teacher bringing years of skill and humor to her classes. She has taught extensively throughout the US and internationally including the Culinary Institute of America and Macy's Degustibus. She has been a guest speaker at the IACP and the International Spa Association, a consulting chef for the Cunard Lines and has contributed to over 10 cookbooks including Dr. Dean Ornish's "Eat More Weigh Less.”
Tracy recently held the position of Culinary Director at the Santa Fe School of Cooking specializing in Southwestern, Native American, traditional New Mexican Cuisine and Mexican Cuisine. She was responsible for all recipe development, instruction, training, private and catered events and community goodwill.
Chef Ritter gives generously of her time to many organizations including Kitchen Angels and Share Our Strength.
